Kale and Sweet Potato Orzo

We adapted the orzo recipe from this one


Orzo: (this makes enough for 4 servings)
2 1/2 cups whole wheat orzo 
1 T olive oi
2 cloves garlic
2 tsp flour
1 cup milk
2/3 cup chopped kale
1/2 cup asiago shredded cheese

Sweet Potatoes: 
1 Sweet potato
1 T honey
1 T olive oil
1/2 T cinnamon
1/4 t Salt


1/2 lb. scallops
1 T olive oil
Salt & Pepper

Preheat oven to 375*.
Cook orzo according to package directions. Set aside
Peel & cut sweet potatoes into 1" cubes. Toss in a bowl with remaining ingredients.
Spread out onto a cookie sheet and bake for 25-30 minutes.

  1. Heat olive oil in a medium-sized pot over medium heat. Add onions, garlic, salt and pepper and saute for 1 minute or until onions are translucent. Add flour to form a roux and cook for an additional minute.
  2. Add about 1/4 cup of the milk to the pot and whisk to work out any lumps from the roux. When lumps are worked out, add the remaining milk and whisk to combine. Bring to a simmer and cook until sauce has thickened, about 8 minutes.
  3. Add chopped kale (make sure to de-vein) to sauce and cook an additional 3 minutes or until kale has cooked down. Remove sauce from heat.
  4. Stir asiago cheese into sauce. When cheese has melted, add cooked orzo to sauce and toss to coat.
Sprinkle salt and pepper on both sides of scallops while heating olive oil in small pan over medium heat.
Place scallops in pan and cook on each side for 2-3 minutes until done.

Serve orzo in topped with sweet potatoes and scallops. Enjoy!
